Easy Fried Rice


INGREDIENTS

Cooked rice (overnight)

3 Eggs

Shallots

Bell Pepper

Peas

Olive Oil

Coconut Aminos

Spices

  • Salt

  • Black Pepper

  • Curry Powder

  • Umami Seasoning

  • Cayenne Pepper

  • Red Pepper Flakes (optional)

DIRECTIONS

  1. Dice shallots and a bell pepper. Heat up a pan on medium heat. We used a 12” stainless steel skillet.

  2. Add olive oil to the pan and drop in the shallots. Gently salt the shallots, and cook until caramelized. Season with black pepper, umami seasoning, cayenne pepper, and a hint of curry powder. Add in the bell peppers and stir with a spatula. Reduce heat to medium-low.

  3. Crack eggs into the pan. Lightly fold the eggs while cooking to avoid over-scrambling. This will yield the perfect size eggs.

  4. Add the overnight cooked rice and mix well to break up any rice chunks. Drop in the peas, then coat generously with coconut aminos to bring color to the mixture.

  5. Cook thoroughly until a desired fried rice texture is achieved. Serve hot and enjoy!
